Mini Muffin Pan Frittatas

Make these protein packed breakfast muffins the night before with eggs or egg whites and your choice of veggies or breakfast meats. Simply reheat in the microwave in the morning.

What You’ll Need:

  • Cooking spray
  • 1 tablespoon olive oil
  • 1 cup chopped bell peppers (multi-colored look beautiful!)
  • 2-3 tablespoons chopped onion (to taste)
  • ½ cup chopped cooked turkey bacon (or regular bacon) – optional
  • 6 eggs
  • 1/2 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 cup shredded cheddar cheese (or your favorite cheese)

Simple Instructions:

1. Preheat oven to 350 degrees. Spray 12 muffin tin cups with cooking spray.

2. Heat olive oil in a skillet over medium heat; cook and stir bell peppers and onion in hot oil until slightly softened – about 3-4 minutes.

3. If using bacon, prepare in microwave or pan as directed on package and break into small pieces.

4. Whisk eggs, milk, salt, and black pepper together in a bowl. Mix cooked vegetables and Cheddar cheese into egg mixture. Spoon about 1/4 cup mixture into each muffin cup.

5. Bake until frittatas are set in the middle and lightly browned, about 20 minutes.

6. Extra frittatas can be saved in an airtight container in the refrigerator and reheated in the microwave the following day.
