Add a new twist to your regular old chicken breast with this tasty Monterey Chicken recipe. The barbecue sauce and bacon bits harmonize perfectly with the melted cheese for a meal that is sure to have you singing its praises.
Ingredients:
4 boneless, skinless chicken breasts
¼ c. barbecue sauce
¼ c. real bacon bits
1 c. Colby jack cheese, shredded
1 14 oz. can of Rotel, drained
Pepper
Directions:
Preheat oven to 400 degrees. Season chicken with pepper. Grill chicken until no long pink (or you can cook it on your stove-top) and place on baking sheet covered with foil.
Top each chicken breast with one tablespoon barbecue sauce, 1/4 c. cheese, 1/4 c. Rotel and one tablespoon of bacon bits. Place in oven and bake until cheese is melted (about 5 minutes).
