No-Bake Energy Bites

Moms, invite your kids to help make these simple, no-bake bites. Make them on the weekend and keep them in the refrigerator for easy snacking all week long.  Each bite is filled with wholesome, energy fueling ingredients. 

Ingredients:

1 cup of dry oatmeal

2/3 cup coconut (we love using toasted coconut)

1/2 cup peanut butter

1/2 cup crushed almonds (optional)

1/3 cup honey 

1 tsp. vanilla extract

1/2 cup of chocolate chips (optional)

Serves: 

Yields about 20-25 energy balls depending on how large you roll them

Directions:

Combine all of the ingredients into a mixing bowl until thoroughly mixed together (if you are toasting your own shredded coconut, be sure it is cooled before adding it into the mix). Chill in the refrigerator for half an hour. After mix has chilled, roll into balls, we recommend about 1" in diameter. Store these power balls in the refrigerator in an airtight container and enjoy for up to a week!
