Personalized Mini Pizzas

Personalize pizza night at your house with these Mini Pizzas. From cheese to veggie to sausage and pepperoni, personalize your pizza to your liking.

Ingredients for Dough
• 1 ¼ cups warm water (100 – 110 degrees)
• 2 packages dry yeast
• 1 tablespoon honey
• 3 tablespoons good olive oil
• 4 cups all purpose flour, plus extra for kneading
• 2 tablespoons salt

For the toppings
• 2 tablespoons of prepared pizza sauce (per mini pizza)
• ¼ cup mozzarella (per mini pizza)
• 3 to 4 slices of pepperoni (per mini pizza)
• Anything else you would like to put on top – have fun

Instructions for Making Your Mini Pizzas
1. Preheat oven to 500° Fahrenheit
2. Combine the water, yeast, honey and olive oil in the bowl of an electric mixer fitted with a dough hook.
3. Add 3 cups of flour, then the salt, and mix.
4. While mixing, add 1 more cup of flour or enough to make a soft dough.
5. Knead the dough on low to medium speed for about 10 minutes, until smooth.
6. When the dough is ready, turn it out onto a floured board, knead by hand 12 times.
7. Place dough in an oiled bowl, cover with a kitchen towel and let rest 30 minutes.
8. Divide the dough into 3 inch balls or desired size, place on a baking sheet and let rest 10 minutes.  Use immediately, or refrigerate for up to 4 hours.
9. If you’ve chilled the dough, take it out of the refrigerator 30 minutes ahead to let it come to room temperature.
10. Roll and stretch each ball into a circle and place on a baking sheet – sprinkled with cornmeal.
11. Spread 2 Tablespoons of pizza sauce on each circle and add your favorite toppings.
12. Bake for 8 – 12 minutes, until the crust is crisp and the toppings are all melted.
13. ENJOY!
