These cupcakes are easy to make and an egg-citing Easter activity to create with the kids. They will come hopping back for more once they taste these easy Easter goodies.
What You'll Need:

1 box cake mix (flavor of your choice – we like lemon or strawberry for Spring)

Ingredients to prepare cake mix (i.e. eggs, oil, water)

24 cupcake baking cups in pastel colors
-
1 can green cupcake icing with tips included
-
24 Peeps marshmallow bunnies in assorted colors

1 bag mini robin egg candies

Simple Instructions:
Preheat the oven and prepare cake mix according to package instructions for cupcakes. Line the cupcake pan with paper baking cups and fill each 2/3 full with batter. Bake according to package directions. Remove the cupcakes from the pan and cool completely before decorating. Attach the star tip to the can of green cupcake icing and use quick pulses to apply the frosting to the top of each cupcake to look like grass. Cut 1/4 inch off the bottom of each Peeps marshmallow bunny so the bottom is flat, and then place on top of each frosted cupcake. Decorate with 2–3 robin eggs.
