Get ready for some fun in the sun with these beach themed cupcakes. Perfect for class parties, birthdays or a backyard barbecue!
Ingredients:

Boxed cupcake mix (flavor of your choice)

Ingredients to make cake mix (eggs, water, etc.)

Silver or blue cupcake baking cups
-
Light blue cupcake frosting with decorating tip
-
Vanilla wafer cookies
-
Cookie decorator frosting in primary colors (red, yellow, blue, green)

Goldfish graham crackers

Directions:
Line cupcake pan with paper liners. Prepare cupcake mix according to package directions and pre-heat oven. Fill cupcake cups 2/3 full. While cupcakes are baking, using cookie frosting to make beach balls with the vanilla wafers (one color in the center and different colors on each side). Be sure to let frosting set. These cute little beach ball cookies can also be served on their own without the cupcakes if you like. You can also add blue or green frosting eyes to the goldfish if you are doing both beach ball and goldfish cupcakes (see picture).
Once cupcakes are baked, let cool until no longer warm to the touch. Frost cooled cupcakes using the canned light blue frosting with decorating tip to cover top of cupcake. Add decorations and serve. Makes 24 cupcakes
