Pot-O-Gold Party Fruit

This delicious and nutritious recipe makes a great addition to every St. Patty’s Day party or anytime you are looking to add a burst of color to one of your celebrations.

What You’ll Need:

  • 1 small container strawberries - sliced
  • 1 can mandarin oranges or 4-5 fresh mandarin oranges - peeled and in sections
  • 1 can pineapple chunks
  • 1 bag green grapes
  • 1 medium container blueberries
  • 1 container whipped topping (or 1 cup mini marshmallows)
  • 10-20 gold foil covered chocolate coins or Rollo® chocolate caramel candies, still wrapped

Simple Instructions:

Start by washing the strawberries, removing the stems and then slicing vertically. Set aside. If using fresh mandarin oranges, peel and then separate into sections. Pineapple chunks are definitely easier to use straight out of the can as they are ready to go.  Simply drain excess juice and set aside. Thoroughly wash the green grapes and blueberries and dry on a paper towel to remove excess water. Once all of the fruit is prepared, arrange on a large platter creating the arcs of a rainbow from largest to smallest – red, orange, yellow, green & blue.  Add whipped topping or mini marshmallows in a small bowl on the left to form a cloud and then place a handful of chocolate gold coins or Rollo® candies on the right as the “pot of gold.”

Serves 8-12
