This savory, guilt-free recipe is packed with protein and vitamins. It's a simply super dinner that requires little prep and fuss, but is packed with flavor to satisfy your entire family.
Ingredients:
1 c. low-sodium chicken broth
1 15 oz. can diced tomatoes
3 15 oz. cans white beans
1 small onion, finely chopped
2 cloves garlic, finely chopped
12 oz. precooked turkey or chicken sausage, sliced
8 c. stemmed spinach (about 6 oz)

Directions:
Combine broth, tomatoes, beans onion, garlic and sausage (we used turkey apple and gouda sausage) in a slow cooker. Cover and cook on low 4 to 5 hours. Stir in spinach, cover and cook until softened, about 15 minutes. Season with salt and serve with your favorite bread. |
