Not-So-Scary Cookie Sandwiches

Need to bring a Halloween party treat in a pinch?  These semi-homemade, chocolate-y cookie treats are filled with fall flavors.

What You’ll Need:

  • 1 Pouch Double Chocolate Cookie Mix (chocolate cookies with chocolate chunks)
  • Ingredients to prepare per package instructions (i.e. egg, oil, water)
  • 1 ½ cups white chocolate chips
  • Chocolate frosting and/or orange cake frosting
  • Halloween sprinkles
  • Non-stick baking pans

Simple Instructions:

Preheat oven according to cookie mix instructions. Prepare cookie mix in medium/large bowl as described on package. Mix in 1 cup white chocolate chips.  Use a spoon to place one inch balls of dough on a non-stick cookie sheet, leaving space in between as cookies will spread while baking. Place 3-4 additional white chocolate chips on the top of each cookie. Bake according to package instructions so cookies look done on the top but are still soft.  Let cool on pan for 5 minutes and then remove and place on aluminum foil to finish cooling.

After the cookies are no longer warm to the touch, spread chocolate or orange frosting on the bottom of half of the cookies and top each with another cookie to make a sandwich. Roll the frosting in festive Halloween sprinkles and serve.
