From the kitchen of Lori Buley -- “This is from my Grandma who I think is a fabulous cook although she doesn’t think so. She manages to create these great comfort food Grandma meals in a kitchen the size of a closet. I don’t know how she does it? The apple juice is what sweetens this pie and I love it because you really taste the apples that way. Grandma Jean is a practical gal and she advised me to skip trying to make my own pie crust and just go with the Pillsbury frozen ones so that’s what I do.”
Ingredients:

1 Package frozen pie crusts

1 6-ounce can frozen apple juice concentrate, thawed and undiluted

2 tablespoons cornstarch

1 tablespoon butter

1 teaspoon cinnamon

1/4 teaspoon nutmeg

6 cups peeled, sliced and cored Golden Delicious & Granny Smith Apples
Directions:

Preheat oven to 450°F.

Combine juice concentrate and cornstarch in a large saucepan. Bring to a boil, stirring frequently. It will turn into a gel as it starts to boil. Add butter, cinnamon and nutmeg, mix well.

Stir in the apples. Spoon into unbaked pie shell and top with second unbaked pie shell crust. Cut slits in top.

Bake at 450°F for 10 minutes. Reduce temperature to 350°F and bake for 35-45 minutes or until golden brown.
