These delightful bite-sized ice cream sandwiches can be made in minutes and bring together the kid-favorite combination of chocolate chip cookies and vanilla ice cream.
What You’ll Need:

16 Nabisco Mini Chips Ahoy chocolate chip cookies

Vanilla ice cream (or ice cream flavor of your choice)

Summertime sprinkles

8 cookie pop sticks (or popsicle sticks) – optional

Melon baller – optional

Simple Instructions:
Remove 16 mini chocolate chip cookies from the package. Using the melon baller, scoop 8 small scoops of ice cream and place on the flat side of 8 of the cookies. Press a cookie pop stick into the ice cream (optional) and then secure second cookie on top to make an ice cream sandwich. Use a knife to smooth the ice cream around the sides. Add sprinkles to the ice cream to decorate if desired and freeze immediately to set.
